_Mona's Granola & Banana Bran Muffins
Mix: 1 cup flour 1 tsp. baking soda 1 ½ cups wheat bran flakes ½ cup raisins 1 cup Mona's Granola
Separately mix liquids: 1 tsp. vanilla 1 egg, beaten ½ cup warm honey (warming honey 30 sec. in the microwave thins it to blend more thoroughly) ¾ cup milk 2 tbsp. soft or melted butter 1 banana, mashed until creamy
Mix dry ingredients, add liquids, mixing just enough to blend.
Bake in muffin tins with liners (for easy clean up) at 375 degrees for 25 min., or depending on your oven, until they rise and are baked in the middle when you test with a fork or knife.
The muffins should be soft & moist, don't over bake as they will continue to dry out as they cool off.
